Announcing Friday Feast : Baked Omelette recipe

Baked Omelette with loads of vegetables and a sprinkling of cheese on top is a perfect breakfast idea!

This baked omelette is a result of the verdict that is out! The results I got by the poll were almost equal and left me even more confused. And man, which one of you voted for the last option, sigh, because someone did! πŸ™‚

I really like Sol’s idea though and I am going to start a Friday Feast series here and see how it goes. So every Friday, I will take you down the culinary road and try to make you drool and motivate you enough to go to the kitchen πŸ™‚

Some days back I was chatting with Goofy and she said she is heading to the kitchen to make baked omelette. This was with a recipe that she had seen on a show. I liked the idea a lot and since I was on a diet, I kept looking for an opportunity when I could make it. Then came my birthday and I made it for breakfast. Everyone in the house really loved it and for a change, even Ojas gobbled it down.

See, this is what I love about eggs. You can do so much with them. Whether it is making a simple anda bhurji which is such an awesome way to eat scrambled eggs, or making some masala French Toast out of it, eggs are very versatile. You can create magic with them really. And they are so handy that they cook very well. Like this everyday egg curry which gets done in 20 minutes! It is one of my favorite recipes to go to when I am running short of time. And then of course, eggs in baking. They are so stunning looking when they are baked in Mexican style edible cups! Sigh, I could go on and on.

So as of now, lets get to the recipe of this yummy baked omelette.

Ingredients
  

  • 4 eggs
  • 1 onion chopped
  • 1 tomato chopped
  • 1 capsicum finely chopped
  • 1 cup cabbage grated
  • 1 cup cheese grated
  • 1/2 tsp oregano dried
  • 1/2 tsp rosemary dried
  • 3 - 4 jalapeno peppers
  • 1 tsp milk
  • to taste salt
  • to taste chilli flakes
  • to taste pepper
  • to taste Tabasco

Instructions
 

  • Beat the eggs well along with the milk. Adding milk to the eggs makes them more fluffy and the dish comes out softer.
  • Add all the other ingredients apart from cheese and Tabasco, and mix well.
  • Pour in a baking dish.
  • Bake in a preheated oven at 200 C for about 4 min till the eggs are about half done.
  • Spread the cheese and sprinkle Tabasco on top now and put it back in the oven for about 5 more mins or till the eggs are done and the cheese nicely melted.

    actually I was thinking of a healthier (read low cal πŸ˜‰ ) option of this, I think I have something in my mind let me try it out one of these days and will tell u, u can it too then

    No conversion re… they all are jaini’s !!!!! and normally they are all Bhrasht Jains but these 8 days of Paryushana they wont eat green veggies no potatoes onions garlics… only pulses and cereals and fruits…

    bah… its the most boring and tasteless festival… !!!!!

    I can talk egg, walk egg, eat egg, drink egg. I just LOVE Eggs so much that once I had 6 eggs as a teenager after my taekwondo and got sick.
