Besan Ka Seera

Besan Ka Seera – Simple, healthy and so delicious! This is what they meant when they coined the term ‘Soul Satifying Food’!

A bowl of besan ka seera gives you the feeling of supreme happiness and reminds of you the warmth you would feel as if you were being given a hug by your mom!

In fact, if there is one food that I associate to mum’s warm cooking in Delhi’s chilly winters. it would be besan ka seera. If there was a dish that would be eaten while sitting in a cosy rajai in the night, it would be besan ka seera. If there was a dish would be lead to me, slowly drifting to sleep while eating it and reading a book simultaneously, its besan ka seera. Now you know what I meant, when I said its a dish which is so full of warmth 🙂

And, according to my mum, its got this super healing powers when one has a cold (and indeed it is, mum’s are always right, aren’t they?).I remember, how as kids we would get happy to catch a cold, because that would mean getting besan ka seera… sigh! Isn’t it amazing that how some dishes just are so dear to our heart and we remember them and love them for the weirdest of reasons!

I was just imaging a world without besan and honestly, it is a scary thought. Imagine – no pakodas, no besan ladoos, no sev, no gatte ki subji, no batata vadas, no besan ke ladoos, no mixture…okay, I think that is a very scary thought, indeed.

In fact, now when I am writing this post, I am craving for besan ka seera yet again. I think after finishing this post, I will go and make some for myself.

Ingredients
  

  • 1/4 cup besan
  • 1/4 cup sugar
  • 1.5 tbsp ghee
  • 1/2 tsp cardamom powder
  • 1.5 cups milk (I like my seera a little liquid, make it one cup if you dont)
  • pinch black pepper powder

Instructions
 

  • Heat ghee in a pan and add the besan to it. Roast till it changes color and leaves a nice aroma.
  • Add cardamom powder to it and add cold milk constantly stirring it so that no lumps are formed.
  • Add sugar and boil for 4-5 minutes, turn off the heat, add black pepepr and eat it really hot.
