Chia seeds & Muesli Parfait is perhaps, one of the fastest healthy and wholesome breakfast that I have discovered recently.
Breakfast is my comfort meal of the day, I like to experiment with it and continuously eat new, healthy and delicious breakfast. I need my breakfast to be filling and to be balanced and it has to keep me going till about 1 pm because as much as I would like, there is hardly any time for a snack break during crazy work hours. Mornings are also so hurried that breakfast for weekdays has to be done under 20 minutes or at the best 30 minutes. There just isn’t more time to put together a detailed meal on table. As a result, I am on always on a lookout for healthy and delicious quick breakfasts.

At our home, we have it with regular cow’s milk but if you are vegan or are lactose intolerant, this breakfast works very well with coconut milk or almond milk as well.
Chia seeds are the new superfood, originally from Mexico. They are dense in nutrients like omega 3 fats, proteins, vitamins and minerals. They are supposed to promote healthy skin, reduce the effects of aging and are beneficial to the heart and digestive system.

Chia Seeds & Muesli Breakfast Parfait
- 1/4 cup Chia Seeds
- 1 cup milk
- 1/4 cup Nut Muesli Kellogg's Fruit &
- 1 cup mangoes chopped
- 1/2 cup berries (straw/blue/mul)
- Stir together milk and chia seeds and chill it in the fridge overnight or for atleast 2 hours.
- In the morning take a glass and pour 1/4 of the chia seeds and milk mixture, top it with mangoes and berries and then 2 tsbp of Muesli.
- Add some more chia seeds and milk mixture and top it again with fruits and muesli.
- Repeat for the other glass and serve chilled for a delicious, healthy and crunchy breakfast
