Zucchini, Corn and Smoked Cheese Muffins

Savory muffins are one of my favorites and these Zucchini, Corn and smoked cheese muffins make me so happy!

These zucchini, corn and smoked cheese muffins were made in a spur of the moment and they sure turned out great!

Its good to start the post with a drool worthy picture, isn’t it? How addicted I am to baking is no surprise to the regular reader of the blog and what I love the most in baking is breads, but post breads, all the savory bakes come a close second.

At my home you can find savory muffins often for breakfast… A long time ago. oh well! sometime back, I had two of my favorite girls (grin) in Bangalore come home for evening drinks and I was wondering what to bake for them… (Btw girls if you are reading this know that I am staring hard at you I’m anger, how long has it been since we met???) and I thought ‘ok let me bake some muffins for them since I didn’t have a lot of time on hand and they usually are yum as well as easy ;)’

I quickly looked into my fridge to see what do I have in stock and I found some zucchini , some baby corn and some lovely smoked cheddar that I had picked up from natures basket in my previous visit on a whim (what’s with me and cheeses btw love shopping for them even a little more than I love eating them ;))

So armed with these ingredients, I went and starting working, a little bit of this, a little bit of that and I put them in for baking. Tanu came as soon as I took the pan out and if I wouldn’t have stopped her she would have surely burned her mouth that day , I was too tempted to dig in too however we behaved like good friends and waited for Pallavi to join too.. Once she came and the drinks were fixed we promptly got on to eating and I still remember the look on the faces of those two – joy, satisfaction and happiness .. That looks make me a very happy girl … Between the three of us, I think we quickly vanished about 8 of those when the girls realised may be they should take some for their patis too and with a heavy heart we packed the rest!

When they were leaving, Pallavi asked me for a recipe for these and I told her exactly what I had done.. A little bit of this , a little bit of that and that I had really had no recipe for it.. However I promised her that I will try and remember what all I put and post the recipe .. I did take a paper & a pen after they went , penned it down and tested it next week on my usual tested aka hubby πŸ˜‰

And here I present to you zucchini , baby corn and smoked cheese muffins… I assure you these will be the best ones you would have ever had, this one is for you, Pallavi πŸ˜‰

Ingredients
  

  • 1.5 cups flour
  • 3/4 cup cheddar cheese grated smoked
  • 1 Zuchini green chopped
  • 2 - 3 baby corn chopped
  • to taste salt (remember cheese has salt)
  • 1 cup buttermilk
  • 1.5 tsps baking powder
  • 1 tsp basil dried
  • 1 tsp pepper freshly ground (I used green )
  • 1 tbsp olive oil
  • 2 eggs

Instructions
 

  • Saute Zuchini and baby corn in olive oil till a little browned.
  • Beat eggs, buttermilk together lightly.
  • Add cheese to it and mix.
  • In a separate bowl, mix all the dry ingredients.
  • Add them to the egg-buttermilk mixture.
  • Mix till just mix, don't over mix it.
  • Pour in lined muffin pan and bake at a pre-heated oven at 180C for 15-20 mins.
  • Serve warm with salsa.

    Monica, I m drooling, it’s a good idea to bake some tasty stuff instead of sweet muffins all the time, I m sure it must have tasted yum, I will post on my food blog when I make this one. Thanks for sharing

    Just a couple of days back I was thinking of trying a savoury muffin, and here’s your post :), I hold you responsible for my GNB trip in the near future ;). Anyway there’s a cheesecake request pending from my daughter, so I hope they have some cream cheese available too!
