Mix mashed peas with thyme, paprika and salt. Set aside
Roast sliced tomatoes in an oven at 180C for 12 minutes with salt and a touch of olive oil. You can add some chilli flakes if you want the sandwich spicy
Heat a sandwich griller and start assembling the sandwich
Spread a generous layer of green peas mixture, top with roasted tomatoes and put a slice of cheese on top.
Spread some butter on both sides and grill in the machine till it is crisp and brown. Repeat for rest of the sandwiches.
Serve hot with tomato ketchup and a cup of coffee for that perfect winter breakfast.
