Green Peas & Roasted Tomatoes Sandwich

Green Peas & Roasted Tomatoes come together to form that Perfect Winter Sandwich. One that you will want to eat every day for the rest of the winter.

Ingredients
  

  • 8 slices bread
  • 1 cup green peas boiled and mashed
  • 4 tomatoes sliced and roasted
  • 4 cheese slice
  • butter
  • Salt to taste
  • 1/2 tsp dried thyme
  • 1 tsp Paprika powder

Instructions
 

  • Mix mashed peas with thyme, paprika and salt. Set aside
  • Roast sliced tomatoes in an oven at 180C for 12 minutes with salt and a touch of olive oil. You can add some chilli flakes if you want the sandwich spicy
  • Heat a sandwich griller and start assembling the sandwich
  • Spread a generous layer of green peas mixture, top with roasted tomatoes and put a slice of cheese on top.
  • Spread some butter on both sides and grill in the machine till it is crisp and brown. Repeat for rest of the sandwiches.
  • Serve hot with tomato ketchup and a cup of coffee for that perfect winter breakfast.

Notes

I used the Olive sourdough bread I picked up from Nature's Basket, ordinary bread will work as well.
Use a good quality cheese slice for best results, I used Mooz handcrafted spiced cheese slices.
I use the below mentioned Sandwich griller and it has been working very well for me just in case you guys are looking for recommendations.
