Apple, Apricot & Muesli Breakfast Bars

These delectable Apple, Apricot & Muesli Breakfast Bars draw their inspiration from Apple pie’s flavours - but in a lesser indulgent way - perfect for breakfast or mid-day hunger pangs, this is a recipe you definitely don't want to miss!

Ingredients
  

For the filling

  • 2 apples medium sized
  • 1/2 cup apricots chopped dry
  • 1 tsp cinnamon powder
  • 1 tbsp butter
  • 1 tbsp brown sugar

For the crust and topping

  • 1 cup whole wheat flour
  • 1 cup muesli Kellogg's Fruit Magic
  • 1/4 cup brown sugar
  • 1/4 cup butter melted

Instructions
 

  • Pre heat the oven to 180C, grease and line a 8 inch square baking pan with a parchment paper. Keep aside
  • Wash, core and chop the apples in a small pieces. I like the texture of the peel in my bars however if it bothers you please peel the apples before chopping. Mixed chopped apples, chopped apricots, cinnamon powder, brown sugar and butter together. The recipe works very well with tart apples like Granny smith but if you are using local crisp apples just add a tsp of lemon juice for tartness.   • For the crust and bottom, mix all the ingredients well till it feels crumbly.
  • Now pour half the crust in the prepared pan and press it down well. Pour the apple mixture and spread evenly. Pour the rest of the crust on top and press it down again.
  • Bake in a pre heated oven for 45 minutes till it is set and lightly browned.
  • Let it cool completely before cutting into slices. The bars can be stored in an airtight container upto 5 days and frozen for upto 3 months.
