Pumpkin Sabji : Khatti Meethi Pumpkin Sabji for Poori

This Khatti Meethi Pumpkin Sabji is perfect to be had along with pooris and pickle. A little celebration in the times of quarantine.

Today’s recipe is a very simple Pumpkin Sabji Recipe. Slightly sweet, sour and spicy it pairs perfectly with paranthas and pooris. Husband seems to like it with rice also but hey, I am not the one telling you that.

And about the lockdown/self-isolation/quarantine. As a family, we finished 12/9 days of quarantine today. And just when it was starting to remotely feel that the worst is behind us, there was a 21 day complete lockdown announced for the country.

I know this is required, an important step and I am happy that the government’s worldwide are starting to take hard calls to contain which has probably been the most contagious virus we have seen. But somewhere, I cannot help feeling a sense of helpness and panic take over.

A few hours after the lockdown was announced were hard I have to admit. I was worried for my family, for my mental health and for that of my house helps.

I also see so many of my friends getting into this panic mode. Some are having serious panic attacks on whether they will have enough food to last through the 21days. I am sure govt has things planned and a lot of our worries seem exaggerated and strange but these are the strange times we are living in.

But then life goes on and I started a little #21DaysofGratitude for #21DaysofLockdown on insta/twitter and FB. That did calm me down a bit and helped me move on.

I also started this thing on insta and twitter where I am suggesting folks what can they make with the stuff they have in their pantry. If you have anything to ask please comment there. Would love to be of little help I can.

Pumpkin Sabji : Khatti Meethi Pumpkin Sabji for Poori

Cook Time 30 mins
Total Time 45 mins
Servings 4 people

Ingredients
  

  • 500 gms yellow pumpkin
  • 1 tbsp mustard oil
  • 1 tsp panch phoran
  • 3 green chillies
  • 1 tsp Kashmiri red chilli powder
  • 1 tsp amchoor
  • Salt to taste

Instructions
 

  • Peel, remove seeds an roughly chop pumpkins in large cubes. In a pressure cooker with very little water boil it for 3 whistles.
  • Let the steam escape naturally and then roughly mash the pumkin. Add salt and mix well.
  • In a small tadka pan, heat mustard oil add panch phoran, green chillies and red chilli powder. Once the seeds are roasted add to the pumpkin., mix and bring to boil.
  • Cook for 5-6 minutes till it is cooked well and add amchoor powder, served garnished with coriander leaves
