Lucknow/Awadhi Recipes : Tikkia & Alu

Tikkia & Alu is a traditional Awadhi dish which is delicious and drool worthy!

While reading Tehzeeb, if there is one recipe that haunted me it was tikkia & alu. I have never had it before and the picture in the book looked drool worthy. Also, the recipe was quite interesting. I love alu and eggs together, but I have always made them together in the form of a curry and not a dry sabzi. In this alu, thin slices of potato and onions are cooked with tempered methi seeds and chillies and served with sliced boiled eggs. Whats not to like, I ask?

Tikkia on the on the other hand was rotis made with stiff poori like atta on slow flame and finished off with a brush of milk. Almost like a cross between mathri and parantha and no oil at all, apart from a little ghee that went in the dough. I was convinced this has to be tried in the house.

I called a friend of mine who is from Lucknow and he told me that his grandmom used to make it for breakfast and serve it with hot steaming cup of chai. Last week at my house I did the same. Everyone in the house from the househelp to the child licked the alu loved it.  The child actually licked the bowl clean and here we are talking about a child who is probably the king of picky eaters. Heck! he is a king of non eaters. I now have standing instructions to make this twice a week at least.

The tikkia however had mixed response in the house, there were a set of people like me and MIL who loved it whereas the N and O preferred a plain parantha over tikkia. MIL even kept one for later and had it dipped in chai.

Lucknow/Awadhi Recipes : Tikkia & Alu

Awadhi Tikkia & Alu is one delicious and drool worthy dish to make!

Ingredients
  

For the Alu

  • 5-6 potatoes peeled and sliced thin
  • 1 tablespoon oil
  • 1 tsp methi seeds
  • 1 onion large sliced thin
  • 2 chillies dried red
  • 3 green chillies chopped roughly
  • 1 tbsp coriander leaves heaped chopped
  • 2 eggs boiled and sliced
  • to taste salt

For the Tikkia

  • 1 cup atta
  • 2 tsps ghee melted
  • 1/2 tsp salt
  • 2 tsps milk to brush

Instructions
 

  • For the Alu:
  • Heat the oil in a pan, add the methi seeds and fry till they turn dark brown. Add the onions and fry till they turn light golden brown.
  • Add the potatoes and salt, cook covered till done. Sprinkle some water now and then if needed.
  • Once the potatoes are done, add the red and green chillies and the corainder. Mix well and switch off the gas. Let it sit covered for 5 mins or so.
  • Just before serving, add boiled and sliced eggs.
  • For the Tikkia:
  • Combine all the ingredients (apart from milk) together and knead with enough water to make a stiff poori like dough.
  • Divide the dough equally into 6 portions. Roll each portion out into 1/10' thick discs. Prick the discs all over with a fork or knife so that it doesn't puff up while being cooked.
  • Heat the tawa, place the rolled tikkia and cook on low heat for 1 minute or so. Turn over and cook the other side a little longer till brown spots start appearing.
  • Turn over and smear milk over the side on the top now (the one with the brown spots). Cook the other side the same way and smear milk over it when done.
  • Repeat for all six tikkias.
  • Serve hot with alu and chai.
