Barley Kachumber Salad - Easy Meal in a bowl

Barley Kachumber Salad transforms the comfort of Kachumber salad into a whole meal in itself. Inclusion of complex carbohydrate in terms of Barley pearls makes it the perfect meal in a bowl.

Ingredients
  

  • 1/2 cup Barley pearls
  • 2 kakdi chopped if using normal cucumber, use 1
  • 1 medium onion chopped
  • 2 medium tomatoes chopped
  • 2 green chillies
  • 1 tsp chaat masala
  • 1/2 tsp chilli powder
  • 1/2 tsp cumin powder
  • Salt to taste
  • 2 tsp lemon juice
  • 2 tbsp coriander leaves

Instructions
 

  • In a large vessel, boil water. Once it comes to boil add the washed barley pearls. Boil till the pearls are tender.
  • Drain the pearls. Don't discard the water, it is highly nutritious. You can spice it with salt, cumin powder and a bit of lemon and drink. Or add sugar and lemon to make barley lemonade.
  • Once the drained barley is completely cool, mix all the salad ingredients gently and serve as a meal in itself or a side to a larger meal. It is perfect either ways.
