Barley Kachumber Salad - Easy Meal in a bowl
Barley Kachumber Salad transforms the comfort of Kachumber salad into a whole meal in itself. Inclusion of complex carbohydrate in terms of Barley pearls makes it the perfect meal in a bowl.

- 1/2 cup Barley pearls
- 2 kakdi chopped if using normal cucumber, use 1
- 1 medium onion chopped
- 2 medium tomatoes chopped
- 2 green chillies
- 1 tsp chaat masala
- 1/2 tsp chilli powder
- 1/2 tsp cumin powder
- Salt to taste
- 2 tsp lemon juice
- 2 tbsp coriander leaves
In a large vessel, boil water. Once it comes to boil add the washed barley pearls. Boil till the pearls are tender.
Drain the pearls. Don't discard the water, it is highly nutritious. You can spice it with salt, cumin powder and a bit of lemon and drink. Or add sugar and lemon to make barley lemonade.
Once the drained barley is completely cool, mix all the salad ingredients gently and serve as a meal in itself or a side to a larger meal. It is perfect either ways.
