For the grilled Paneer
- 200 gram paneer
- 1 tbsp black sesame seeds
- 2 tsp Paprika powder
- 2 tsp olive oil
- Salt to taste
For the dressing
- 1/4 cup Mango Puree
- 1 tsp ginger paste
- 1 tsp chilli flakes
- 1 green chilli chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp coriander leaves chopped
- 2 tsp lemon juice
- Salt to taste
For assembling the salad
- 8-10 cherries de-pitted
- 1 medium cucumber
- 1/2 cup lettuce leaves
- 1/3 cup rocket leaves
For grilling paneer, mix together sesame seeds, salt and paprika powder. Coat sliced paneer pieces in it and grill on both sides till golden brown. I use a silicon brush to grease my pan lightly
Mix all the dressing ingredients well in a old jam bottle. They will just emulsify and not really blend fully well and that is fine
Mix all salad ingredients, grilled paneer and pour salad dressing on it just before serving
Enjoy with a side of soup or a meal in itself
