Grilled Paneer Salad with Mango Chilli Dressing

This Grilled Paneer Salad with Mango Chilli Dressing has a perfect balance of sweet, spicy and tart. It’s light, fresh and perfect for a summer meal. Yes we are still stuck on Mangoes, trying to make the most of it before they go away.

I have often spoken about my love-hate relationship with Paneer. But one thing I have always liked Paneer as been Paneer Salad, in fact I think Paneer and Chicken both make for perfect easy and quick protein additions to your salad. And that is the only way  both paneer and chicken should be used. I know I know, I can see a lot of you making faces at me but what to do that is what I honestly think.

Grilled Paneer Salad

Let me give you some background here. Inspite of being a Punjabi and growing up in Delhi, I have more or less detested paneer all my life. And that compounded when I moved to Bangalore 15 years ago, since the quality of paneer in Bangalore pretty much sucks. I only started liking paneer a bit when I was dabbling with low carb diet and keto a few years ago. Paneer would be a great option for the days or meals when I didn’t feel like eating meat or eggs. But like karma always does, it came to bite me when my son started LOVING paneer. Paneer is probably one of the only vegetarian food he adores and as a result we all are starting to like it more. So as much as I would want to restrict it to salad food, I can’t. Things one does for their children. *Insert eye roll*

Mango Chilli Salad Dressing

Anyways, like always I get carried away while telling a story. So the other day, I grilled some paneer and then looked around on what I can put in the salad along with it. At home we are still pretty much obsessed with mangoes and other summer fruits. So I knew mangoes have to go in but this time around I added mangoes in the dressing rather than in salad itself, combined it with some cherry I had at home cucumber, home grown lettuce and rocket and the results were pretty amazing if I can say so myself.

Grilled Paneer Salad with Mango Chilli Dressing

Ingredients
  

For the grilled Paneer

  • 200 gram paneer
  • 1 tbsp black sesame seeds
  • 2 tsp Paprika powder
  • 2 tsp olive oil
  • Salt to taste

For the dressing

  • 1/4 cup Mango Puree
  • 1 tsp ginger paste
  • 1 tsp chilli flakes
  • 1 green chilli chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp coriander leaves chopped
  • 2 tsp lemon juice
  • Salt to taste

For assembling the salad

  • 8-10 cherries de-pitted
  • 1 medium cucumber
  • 1/2 cup lettuce leaves
  • 1/3 cup rocket leaves

Instructions
 

  • For grilling paneer, mix together sesame seeds, salt and paprika powder. Coat sliced paneer pieces in it and grill on both sides till golden brown. I use a silicon brush to grease my pan lightly
  • Mix all the dressing ingredients well in a old jam bottle. They will just emulsify and not really blend fully well and that is fine
  • Mix all salad ingredients, grilled paneer and pour salad dressing on it just before serving
  • Enjoy with a side of soup or a meal in itself
