Peel, remove seeds an roughly chop pumpkins in large cubes. In a pressure cooker with very little water boil it for 3 whistles.
Let the steam escape naturally and then roughly mash the pumkin. Add salt and mix well.
In a small tadka pan, heat mustard oil add panch phoran, green chillies and red chilli powder. Once the seeds are roasted add to the pumpkin., mix and bring to boil.
Cook for 5-6 minutes till it is cooked well and add amchoor powder, served garnished with coriander leaves
