Easiest and yummiest ever rice
A really simple coriander rice which is perfect if you are out of vegetables in the house and are looking for an easy and quick dish!

- 1 cup rice Basamati (I think any rice would work)
- to taste salt
- 1/2 cup coriander leaves
- 1 onion small
- 2 or 3 green chillies depending on how spicy you want your rice
- 1 pod garlic
For the seasoning
- 1 tsp oil
- 1 tsp mustard seeds
- 1 tsp channa dal
- 1 tsp urad dal
- handful curry leaves
- coriander leaves extra for garnishing
Cook the basamati rice just enough as you want to, I pressure cooked them with 1:1.5 times water for one whistle.
Grind all the ingredients for the paste together.
Heat oil in a pan add mustard seeds to it, let it crackle.
Add curry leaves, dry red chillis, urad dal and channa dal. Roast for 2 minutes till the dal turns slightly brown.
Add the grinded mixture and cook for 2 minutes. Cool a little and add to the boiled rice.
Garnish with fresh coriander leaves and bingo its ready to be eaten.
