Zucchini Chutney (Spicy Zucchini Relish)

Ingredients
  

  • 1 zucchini medium
  • 1/2 cup coconut grated fresh
  • 2 - 3 green chillies
  • 1 onion small
  • 1 pod garlic
  • 1/2 inch ginger
  • to taste salt

For the tempering

  • 1 tsp ghee /oil
  • 1 tsp mustard seeds
  • 2 chillies dry red
  • 1 sprig curry leaves

Instructions
 

  • In a heavy bottom pan, heat oil and saute onions and garlic together till lightly browned. On high heat, add the zucchini and saute till browned and looks slightly charred. Keep aside for cooling.
  • Once cool, grind together with grated coconut and green chillies to form a smooth paste. Use little water if required. Add salt to taste and mix.
  • For the tempering, heat ghee/oil in a small pan and add mustard seeds, dry red chillies and curry leaves. Once the mustard seeds start crackling add to the chutney and serve with idly/dosa.
