Hare Tamatar Ki Sabji - Green Tomato Curry

Hare Tamatar Ki Sabji or the Green Tomato Curry is the perfect dish to make from those tart green tomatoes. Works with roti, rice or pooris. And oh it is fast friendly as well.

Ingredients
  

  • 6-8 Green tomatoes (250 gm)
  • 2 tbsp mustard oil
  • 1 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp Onion seeds kalonji
  • 1/2 tsp methi seeds fengureek
  • 1 inch ginger finely chopped
  • 2 green chilli finely chopped
  • 1 tsp red chilli powder
  • 1 tsp Roasted cumin powder
  • 1 tbsp jaggery (or sugar)
  • 1/2 tsp turmeric powder
  • Salt to taste

Instructions
 

  • Heat oil in a heavy bottom pan or kadai. Add cumin seeds, mustard seeds, onion seeds, methi and ginger. Sauté till lightly browned.
  • Add green tomatoes and mix well. Sauté on high heat for 3-4 minutes constantly stirring.
  • Add dry spices and Sauté further for a minute.
  • Add about 1 cup of water, cover and cook till tomatoes are cooked You don't want them to pulp up but just cooked. If necessary add a little water from time to time.
  • Serve hot with rotis.

Notes

My mum sometimes add a bit of kasoori methi to it and I find that a very interesting variation as well.
