Take a big pot of water and bring it upto a boil.
Add salt and the cleaned potatoes
Let them cook until they are fork tender, when pricked your fork should go through easily.
Drain the water and place them on a baking tray
Pre heat your oven to 220C
Meanwhile, using something heavy, like maybe the back of a saucepan, smash the potatoes, just so that it still holds a little shape.
Drizzle olive oil and season with salt and pepper
Place them in the oven and let it brown for about 30 mins
For the walnut raisin drizzle, heat some chilli oil, toast walnuts in it
Grate a clove or two of garlic into it.
Add the raisins to the hot mix and turn off heat.
Taste and add in a little bit of lime juice and salt to balance it.
Once the potatoes are done, drizzle the walnuts and raisins all over and serve with your favourite dip.
