Crispy smashed potatoes

Ingredients
  

  • 10 nos baby potatoes if you don't get baby potatoes, use normal but small sized ones
  • 3 tbsp salt
  • 1 tbsp chilli oil
  • 2 tbsp Walnuts chopped
  • 2 tbsp raisins
  • 1 tsp black pepper powder
  • 1 tsp lemon juice
  • 2 cloves garlic

Instructions
 

  • Take a big pot of water and bring it upto a boil.
  • Add salt and the cleaned potatoes
  • Let them cook until they are fork tender, when pricked your fork should go through easily.
  • Drain the water and place them on a baking tray
  • Pre heat your oven to 220C
  • Meanwhile, using something heavy, like maybe the back of a saucepan, smash the potatoes, just so that it still holds a little shape.
  • Drizzle olive oil and season with salt and pepper
  • Place them in the oven and let it brown for about 30 mins
  • For the walnut raisin drizzle, heat some chilli oil, toast walnuts in it
  • Grate a clove or two of garlic into it.
  • Add the raisins to the hot mix and turn off heat.
  • Taste and add in a little bit of lime juice and salt to balance it.
  • Once the potatoes are done, drizzle the walnuts and raisins all over and serve with your favourite dip.

Notes

In the picture, the potatoes are served over a bed of hummus, topped with walnuts and raising sauteed in Chilli Oil.
