Olive & Spring Onion Cheesy Dip

Olive, Spring Onion & lots of cheese. What’s not to love. And if that wasn’t enough the dip doubles up as a sandwich filling too.

When it comes to parties or generally sit down dinners, I love serving as many varieties of dishes as possible, given my love and penchant for food :D. I love how people pass the food around, how people finally zero in on that one dish of the day that passed their expectations, the whole atmosphere that having good food brings out in people. And the dishes I really love experimenting with the most are the dips that I serve along. Dips, especially the cheesy ones are super versatile – this particular Olive & Spring Onion Cheesy Dip has been used in this household for lots of things – sandwich fillings, on top of tortillas and even spread on rolls or a chapati as a quick and yummy snack. The child as well loves how I usually have something or the other at hand, to spread on a slice of toast or just dip his chips in, at snack time.

Cheese and Olive Dip

I usually have olives lying in the refrigerator, because they add an extra punch to anything they are added too. I read somewhere that Olives are nature’s vitamin capsules in themselves. Did you know they actually keep our hearts healthy and are also chock full of the super nice antioxidants that keep our body healthy and happy. Keep in mind however, that most olives, by the time they are available to us, go through a very rigorous curing process, so have a lot of salt than normal, so when seasoning any dish that you incorporate them into remember to keep the added salt, to a lesser quantity than usual.

If you like me you are fond of olives, you’ll love this Olive & Spring Onion Cheesy Dip. Even if you don’t like olives, don’t fret – you’ll start loving them after this one. This simple but robust combination of olives and the spring onion takes this dish to another level. Olive dips usually go best with anything at all – spread it on a slice of toast or put some on a cracker and take a bite. Put it in a sandwich and grill, the child also likes them spread in his roti roll.

Olive & Spring Onion Cheesy Dip

Featuring delectable spring onion and tasty olives, this easy-to-prep olive & spring onion cheesy dip is delicious and super versatile too

Ingredients
  

  • 1 Cup cheddar cheese grated
  • 1 Cup mozzarella cheese grated
  • 3/4 Cup Green olives pitted & sliced
  • 3/4 Cup Black Olives pitted & sliced
  • 1 Cup mayonnaise
  • 1 Cup spring onion chopped

Instructions
 

  • Pre-heat the oven to 180C
  • In a large mixing bowl, mix together all the ingredients together till blended
  • In a greased oven proof bowl, pour the mixed ingredients and bake for 20 minutes till the cheese is melted.
  • Serve with toasted bread or nachos or use as a filling in sandwiches and rolls
