Chef Deepak Rana from JW Marriott Mussorie, Chef Dinesh from JW Marriott Chandigarh, Chef Rohit Yadav from JW Marriott Delhi, Chef Ranjit from Marriott Jaipur, Chef Mitesh Saraiya from Courtyard by Marriott Ahmedabad, Chef Prashant Suryavanshi from Courtyard by Marriott, Hinjewadi, Chef Thirumal from Bengaluru Marriott Whitefield, Chef Madhusudan from Marriott Hyderabad, Chef Satish Reddy from Courtyard by Marriott Chennai, Chef Saji from Marriott Kochi, Chef Shanavaz Qureshi from JW Marriott Mumbai, and Chef Selester from Marriott Goa are all here, each of them expert in a particular cuisine, Cuisines including Gadwali, Rajasthan, Goa, Hyderabadi, Kerala are all represented, by not just the popular food of that place, but also lesser known dishes. Dishes that are slowly making way to the easy and popular ones.
We had a fun cookout with chefs as a launch of the festival. 4 teams, 3 bloggers in each team plus one chef whose hands were tied. The chef could guide the team with. The chef could only guide us by telling what to do. I did imagine that to be a tough task since I cook myself and I know how tough can it get to not be to able to do something you know very well and I could see that itching so many times in the chef. The contest was judged by Suresh Hinduja.
Neha, Richa and I formed one team and were supposed to cook “Murgh Hyderabadi Dum Biryani”. The other teams were cooking – Goan Fish Curry, Gatte Ki Kadhi and Kerala Chicken Roast. I had a blast cooking in the kitchen learning a few tricks from the chef about Biryani, about how to layer them (for home flame : 20% cooked, 50% cooked, 80% cooked),. chatting up regarding what goes in the potli masala on how he makes his home made garam masala. I am going to cook the recipe I got from him soon and share with you guys.

And the winning dish was the brilliant Kerala Chicken Roast.
The festival runs at M-Cafe for dinner only from 7th September to 13th September and has some brilliant variety of food under one roof in a beautiful step. Go explore in my opinion and be amazed at what India has to offer.
