Citrus Coconut Muffins taste super delicious with the citrusy taste of the zest complimenting the slight sweetness of the coconut!
Yes, its time for Muffin Monday again and I can’t tell you how much I am loving this whole concept of baking muffins with a group! One, I don’t have to think much what to give Ojas for snack box for at least two days. He takes the muffins I bake to school and comes back with empty snack boxes 🙂 And, secondly, muffins are so much fun to bake and with a lovely group like this, it is totally fun. Ojas loved these citrus coconut muffins I made this week.
Actually, this week, the muffins were extra special to me as I baked them for my Diwali basket, For my non Indian readers, Diwali is one of the biggest festivals in India, celebrated with lights and crackers. The atmosphere is much like Christmas, with joy and happiness all around. This year too, like last year, I have decided to give homemade baskets as Diwali presents instead of buying sweets from outside.
The citrus coconut muffins were deliciously soft, the citrus flavour added a lovely punch and the coconut gave that crunch which brought a beautiful balance to the whole dish! So this definitely formed a part of my Diwali basket!
While adding the lemon zest to the batter, I was thinking about the usage of zest in our food. Honestly, I believe, any kind of zest, whether it is lemon or orange, is highly underrated in our cooking. The zest has so much flavor and adds so much depth to any kind of dish! The addition of zest to a recipe means that the tangy flavor of the dish is enhanced!
When I made the citrus coconut muffins, they were much loved in the house and we loved baking these! I hope you have fun too!
