Best Ever Sheet Pan Grilled Chicken

Who doesn’t love one pot (or one pan) meals. This Sheet Pan Grilled Chicken is all kinds of goals for one pot meals. Fuss-free, delicious and oh so easy!

So we are in Day 5 of self-imposed quarantine or isolation whatever you want to call it. Things are falling into place slowly, work being assigned and all of doing what has been assigned. We have still not started fighting which is a good thing. I think this Sheet Pan Grilled Chicken is helping too 😉

Ha ha, I know that was a joke but I do think in many ways food is keeping us together and sane. We are planning the meals together, cooking together and sitting down and eating. Even when minds have a million things racing through your mind. Work that needs to be turned in. The next set of news coming in.

It is like an overload on senses and mind in every sense. Some days like today I don’t know what to make of it. I feel lost and low, I feel the anxiety building up and everything seems off. These are the days I feel the rhythm of kneading bread, chopping vegetables comforting. The kitchen, as usual, provides comfort and the fact that I & O are cooking together side by side is the best thing that I can think of.

But enough of my rambling and thoughts here is the recipe you can here for! This Sheet pan-grilled chicken is best ever really. Don’t believe me? Make it and then tell me?

Best Ever Sheet Pan Grilled Chicken

Ingredients
  

  • 500 gms Chicken Thighs
  • 1/2 cup mayonnaise
  • 3 tbsp Mustard Sauce
  • 2 tbsp Chilli Paste
  • 1 tbsp olive oil
  • 10-12 garlic clove
  • 1 cup broccoli
  • 1 cup bell peppers
  • 1/2 cup Cherry Tomatoes
  • 1 tsp bailey
  • Salt to taste

Instructions
 

  • To start with let's make the marinade of the chicken. It is actually pretty simple. Mix together Mayo, mustard sauce, chilli paste salt, pepper and then coat chicken in it. Shove it in the back of the fridge for a couple of hours at the least. 5 to 6 hours will be great but keep it at least for a few hours
  • Chop all the vegetables roughly. Here use any vegetables you want. If you want this to be a complete meal and not add on carbs throw in some potatoes.
  • Heat the oven to 200C for 20 mins. In a baking sheet large enough to hold all chicken pieces in a single row, arrange the marinated chicken. Spread garlic and vegetables around the chicken. Spread the rest of the marinade around it.
  • Grill the chicken for about 25 mins or done. Let the chicken rest for 15 mins till done and then eat warm. That's it, didn't I tell you it is a fuss free recipe.
