A Day For Baking – Simple Baked Pasta

A simple baked pasta recipe which serves as the perfect dinner option, full of health and taste!

N, Ojas and I – all of us love pasta, and this is the simplest and frankly, the most delicious pasta recipe. This simple baked pasta recipe works well with almost all pastas. I have tried it with Frafalle, Penne, Fussili, Alphabet Pasta, the shells and it tastes well with everything. Of course, the colored alphabets pasta are Ojas’s favorite and we often end up buying those and making this pasta.

I usually take out my portion, spice it up with more chilli flakes and Tabasco sauce before baking the rest. I used cabbage, capsicum, carrot, baby corn, but you can use whatever vegetables you like. And if you like your vegetables crisp, just skip blanching them. I usually blanch my vegetables for Ojas.

Since, I was in a baking mode today, I made some yummy banana muffins courtesy the Baking Buddies. I ended up modifying her recipe a little. Instead of using maida completely, I used 3/4th whole wheat flour and 1/4th maida. I increased the eggs to two and the result was healthier and still yummy muffins.

I also experimented with bread the first time in life.. Again with Mandy’s recipe. but what a disaster it was! It is edible but doesn’t have the bread texture at all. My bread is shouting for help, Mandy. I feel there was some problem with the way I handled yeast or maybe, the yeast I bought was not good enough because the dough didn’t raise at all, even after keeping the dough for four hours!

It was definitely a day of baking for me, and I must admit I have fallen in love with the baking process. Who am I kidding? I have always loved baking and trying out these new recipes does give me a lot of satisfaction. So what, if the bread didn’t come out well, I will conquer that one day too!

A day for Baking

A simple baked pasta recipe which serves as the perfect dinner option, full of health and taste!

Ingredients
  

  • 1 cup pasta (I use whole wheat/semolina)
  • 1/2 cup cheddar cheese grated
  • 1 cup veggies chopped and blanched
  • 1 onion chopped
  • handful oregano thyme basil fresh or dried
  • to taste salt and red chilli flakes
  • 1 tsp olive oil
  • 1 tsp butter

Instructions
 

  • Boil pasta as per instructions.
  • Heat olive oil and butter in a pan.
  • Add the herbs and onions and fry for 3-4 minutes. The onions won't really turn brown because of olive oil and butter.
  • Add the veggies and stir fry for 3-6 minutes depending on whether you have blanched your veggies or not.
  • Add salt and red chilli flakes.
  • Fry for another 2-3 minutes.
  • Transfer to a baking dish, sprinkle the grated cheese.
  • Bake in a preheated oven at 180C for about 5 mins till the cheese is nicely melted.
  • Serve hot.

    I will definitely need to add exra chilli and tabasco to my portion 🙂 Am making it this evening, Daughter will love it too!!

    My Daughter and Son are the newest bakers in the house so I will show them the Banana Muffins too. I only use whole wheat atta and saffola/mustard oil or olive oil Monika, my kids have never had cakes and rock buns (cookies) made from maida (when cooked at home) but never tried this with muffins! Def. going to try …!! Thanks!

    Wow, Monika, Baking day sounds delicious! The pasta sound delish too! I will give this a try. I make something similar – but I don’t bake it – just a stir through pasta. Will try baking it like this next. Poohi and I love pasta – so we make it every so often 🙂

    Banana muffins! I have to bake -have been trying to stay away from baking 🙁 Yesterday, Poohi wanted cake – so I baked a micro cake in a coffee cup – but it was nothing like the real thing 🙁

    About your bread – it does look like a problem with the yeast – for me it rose very easily. The yeast I used needed to be activated in warm water/milk. But from what I have seen, there are some yeast that can be added directly without activating and some that need activating.. So it must be a yeast issue, I guess. Am sure it will turn out fine the next time.

    me is baking but not eating… but i did give in for a small bite of muffin though…

    Ooh nice recipes..I just made Whole wheat Banana Bread day before ..next time I’ll try your muffins recipe..

    Aas for the bread, I think yeast must be the problem. When I used to bake back in India I also used to face the same problem with dry yeast.

    I finally went to a small local bakery and bought yeast from them , wrapped it into small portions and froze them. That way they kept for some time too.

    And those yummy muffins – you used atta more and maida less – thats a gud try – I shld also do that !!!! Atta is better than the refined maida !!!! 🙂

    Do u have any recipies for pasta sauce? They like it soaked in sauce in my house (goosh included!) and my sauces turn out terrible. So afar the best sauce I made was outta a packet – Maggi Rich Tomato Soup! 🙂

    i said na i will try this.. went to buy cheddar cheese yday and there were around 15 kinds of cheddar cheese.. I missed having your no. to call u right there n find which one do u use for that taste u so dearly love.

    I just bought one randomly.. it tastes fine and will use in pasta soon..

    right now i feel like doing a research online on cheddar cheese. The supermarkets here are only good to confuse me

    LOL I know when I go to the cheese counter of the super market I feel the same, I usually buy the simplest britannia cheddar cheese for this and the other fancier varieties for special occasions or to have with wine…
