Broccoli, Red Chilli & Garlic Rice

 A vibrant and fantastic one pot meal idea - This broccoli, red chilli & garlic rice is full of flavors and so delicious!

Ingredients
  

  • 1 cup basmati rice
  • 1 broccoli medium sized cut into florets
  • 1 onion large sliced
  • 5 - 6 pods garlic
  • 4 - 6 chillies red fresh (you can use red bell peppers too)
  • 2 tsps olive oil
  • 1 tsp pepper fresh ground
  • to taste salt

Instructions
 

  • Boil the rice and keep aside for cooling.
  • In a pan heat oil,fry garlic for 2 minutes.
  • Add onions to it and fry it they turn pink.
  • Add the chillies and broccoli and stir fry for 4-5 mins till the broccoli is just about done but not overcooked.
  • Add fresh ground pepper fry for another minute.
  • Add to rice and dig in!

Simple and yummy and yeah forgive me for posting so many pics… I can’t get over the vibrancy of the dish.
