Baked Yoghurt with Cointreau Orange Compote

Baked Yoghurt with Cointreau Orange Compote is one of those easy to make desserts which look so stunning that no one can resist it!

Ingredients
  

For the baked yoghurt

  • 1 vanilla bean
  • 200 g fresh cream
  • 200 g condensed milk
  • 200 g yoghurt plain

For the Cointreau Orange Compote

  • 2 tablespoons Orange Zest
  • 2 - 3 oranges
  • 1/4 cup sugar (you can increase this if you want, I like low in my compote)
  • 1/2 teaspoon rock salt
  • 2 Star Anise
  • 1/4 cup Cointreau

Instructions
 

  • n a pan, mix all the Compote ingredients together and bring to boil, reduce the heat to low and let it simmer till the oranges are cooked and the mixture looks a little (for the lack of a correct word syrupy?). This will take about 12-15 minutes. Keep it aside for cooling
  • Split open the vanilla bean and scrape off the inside (hey don't throw away that bean yet, you can make an excellent vanilla essence with that, just soak it in 1/4 cup of vodka, keep in an airtight bottle and forget for 5 week and voila you have a brilliant essence readyu2026 but we digress.. ;) ).
  • Mix it with the yoghurt and blend till smooth.
  • Mix in the cream and the condensed milk to the above mixture, till everything is well blended
  • Pour in ramekins or in a bigger pie dish and a bake at a preheated oven at 120C (the low temperature is important to help yoghurt stay stable) for about 15-20 mins till just about set, the ramekins may get done at 15 mins and the pie dish at 20. So do keep an eye after about 14 mins :)
  • Serve chilled topped with the compote
