Cheera Thoran (Amaranth Leaves Stir Fry with Coconut)

Amaranth Leaves are so healthy, they are almost super food. Packed with minerals, vitamins, high in protein these leaves must be a part of your regular diet. Here is a simple thoran from Kerala using the Amaranth leaves that I grew in my garden. Cheera Thoran or Amaranth leaves stir fry!

Ingredients
  

  • 2 cups Amaranth Mixed leaves
  • 1 onion sliced (or use shallots)
  • 3/4 Cup Coconut Grated
  • 2 Green chillies , sliced
  • 3 pods Garlic
  • 2 Chillies Dry Red
  • 1 tsp Mustard Seeds
  • 1 tsp Urad Dal
  • handful Curry leaves
  • to taste Salt
  • 1/2 tsp Turmeric powder
  • 2 tsps Coconut Oil Virgin

Instructions
 

  • Heat coconut oil a clay pot or a heavy bottom pan and when medium hot, add mustard seeds and once they start spluttering add the urad dal and chillies. Saute for 1 minute till the dal starts to brown.
  • Add chopped garlic and sautee for another one minute. Add sliced onions or shallots along with curry leaves and sautee further till they onions turn translucent. Add salt and turmeric powder and stir to mix.
  • Add the washed and chopped amaranth leaves, mix well and cook for 3-5 minutes. Do not overcook the greens. Add grated coconut and swtich off the heat. Let it stand for 5 minutes and serve with hot rice, dal and curd for a mindblowing meal
