Walnut and Honey Cake

No fat, no processed flour, no processed sugar yet delicious warm and moist cake. This walnut and honey cake is a winner and must have recipe.

  • 100 gm walnut (1 cup) shells
  • 1.5 cups whole wheat flour
  • 2 apples , cored and pureed
  • 1 cup honey
  • 1/2 cup yoghurt
  • 1 tsp baking soda
  • 1/4 tsp ginger
  • 1/2 tsp cinnamon powder
  • 3 eggs large
  • 2 tsps honey for glaze


  • Pre heat the oven to 180C. Spread the walnuts on a baking dish and toast for 5-7 minutes and let it stand for cooling.
  • After the walnuts have cooled a bit, coarsely grind them and keep aside.
  • Sift together flour, baking soda and the spices.
  • In a large bowl, whisk together pureed apples, eggs, yoghurt and honey.
  • Mix together the dry and wet ingredients and then fold the walnuts to it slowly.
  • Pour in a 9-inch greased pan and bake for 55 minutes till the skewer comes out clean
  • Let it cool for 10 minutes then pour honey over slightly warm cake.
  • Serve warm, this keep good for 2-3 days in an airtight container though it is best the same day.
