Watermelon Salad with Pickled Onions & Feta Cheese
My take on the famous Watermelon Salad. Pickled onions along with the obvious feta cheese and a generous sprinkling of toasted sunflower seeds for crunch make this version perfect !

- 3 cups watermelon deseeded and chopped
- 2 tbsp sunflower seeds lightly toasted
- 1/2 cup feta cheese
For the pickled Onions
- 2 medium onions peeled and sliced in rings
- 1 tsp balsamic vinegar
- 2 tsp extra virgin olive oil
- 2 tbsp mint leaves
- 1 tsp Paprika powder
- Salt to taste
For the dressing
- 1 tsp extra virgin olive oil
- 1 tsp lemon juice
- Salt to taste
Mix slice onions with oil, vinegar, mint leaves and spices gently. Cover and refrigerator for about 2-4 hours.
Once the onions have sat enough, mix all the ingredients of the salad together and pout over the dressing.
Serve immediately
