Sift together maida, baking powder and baking soda. Keep aside.
With a hand mixer, beat together eggs, sugar and melted butter till light and fluffy. Add milk and beat further for 1 minute
Slit the vanilla bean and add the black extract to the egg mixture.
Add the flour mixture and beat till it is mixed.
Pour in the silicon mould and bake for 10-12 minutes till the sides start to brown.
Enjoy with a good fruit compote, whipped cream and maple syrup

This recipe can be doubled easily if you want to make more waffles.Look at my pancake posts for compote ideas. For this picture, I made a quick compote with a mix of blueberry jam from Belgium and some fresh blueberries I had.
