Winter in a bowl : Carrot, Radish & Peas Salad

A salad that screams winter! Carrot, Radish & Peas Salad which come together with an Indian dressing, to create a perfect winter dish!

I eat a LOT of salads at home but somehow I only get around sharing salads on instagram (follow me there BTW, if you aren’t already. Some fun food and travel stuff). This year with a promise to myself to share more recipes, I will do 52 salads, one a week. Looks doable. Fingers crossed that this will happen. What better than starting off with this carrot, radish & peas salad!

 

This beautiful salad is inspired by Delhi winters, that I miss so sorely. The bright red carrots, slightly sweet and full of flavour. White as snow radish, with slight sharpness, nice and juicy. And those tender melt in your mouth fresh peas. I combined them all together to bring this beautiful salad together, with a dressing of simple Indian spices, lemon and mustard oil. If you aren’t too fond of the pungent mustard oil, you can replace it with EVOO (Extra Virgin Olive Oil). I have tried it with that and the salad still tastes great.

So here is a salad which screams Winter in a bowl. It is amazing how we have memories from our childhood gain so much prominence as we grow older! I am sure I was not a very ready helper to mum while we were shelling fresh green peas at home, but now for me, it is therapeutic. I love to shell fresh green peas in winter, which taste so sweet and tender and use them up in different ways. Whether it is the Banarasi Nimona or a stuffed peas parantha, green peas are a favorite for me. And I end up buying them by the kilo in winter and freeze them up for summer! Winter in a bowl : Carrot, Radish & Peas Salad

52 Salads in 2016 and starting with this winter salad. Carrot, Radish & Peas in an mustard oil & Indian spices dressing.

Ingredients
  

  • 2 Carrots red large
  • 4 radish white small
  • 1/2 cup Peas fresh and peeled
  • handful coriander leaves

For the dressing :

  • 1 tbsp Mustard Oil or use Extra virgin Olive Oil
  • 1 tsp lemon juice
  • 1/2 tsp chilli Powder
  • 1/4 tsp jeera Powder
  • to taste salt Black

Instructions
 

  • Peel and grate the red carrots and white radish. Keep aside till needed,
  • In an old empty jar, mix all the dressing ingredients and shake till well blended.
  • Mix carrots, radish and peas. Add the dressing and gently mix. Garnish with coriander leaves and relish along side a meal or a light meal by itself.

    The salad looks so fresh and crunchy. I too need to make resolutions to ‘eat’ salads . Shall start with this one. Happy New Year to you Monika.
