Shalgam ka bharta | Mashed Turnip Stir Fry
Shalgam Ka Bharta or  Mashed Turnip Stir Fry or Spiced Turnip mash is a delightful winter special of Punjab. A dish which was my granny’s special.

  1. Wash, peel and roughly chop turnip and boil it in the pressure cooker for 2 whistles. Let it rest till the steam has fully escaped.
  2. In the meantime, in a kadhai heat oil. Once the oil is hot, add jeera seeds and sauté till they turn brown.
  3. Add the finely chopped onions and sauté further till the onions are cooked and pink in color.
  4. At this stage add the finely chopped tomatoes and sauté till they are fully cooked.
  5. In the meantime, once all the steam has evaporated from the cooker. Add chopped sugar, coriander leaves, green chillies, salt and chilli powder to the turnip and mash it well.
  6. Add the mashed turnip to the cooked tomatoes and mix well. Sauté further for 2-3 minutes.
  7. Add amchoor powder, mix well and turn off the heat. Serve hot with fresh phulkas and a dal on side.
Recipe Notes

As a variation, you can also add fresh green peas to this. Also some people make it without the coriander leaves but I love the flavour that coriander leaves bring to the shalgam ka bharta.
