Pomelo Pomegranate salad – What Summer needs!

We at home eat a lot of salads in general but in summer that number goes up even more. This Pomelo Pomegranate salad is the current favourite, citrus notes of grapefruit is all I need this summer.

Grapefruit or Pomelo or chakotra is one of my favourite summer fruits. I know I say that for a lot of fruits but I think fruits are what make summer bearable. And this Pomelo Pomegranate salad is our current quick comfort meal. Leaving a quick recipe here for you all.

Pomelo Pomegranate salad

Pomelo Pomegranate salad - What Summer needs!

Ingredients
  

  • 1 large pomelo
  • 1 large pomegranate
  • 8-10 Cherry Tomatoes
  • 1 cucumber
  • 1/2 cup peanuts
  • Handful of microgreens

For the Dressing

  • 2 tbsp pad thai sauce I used Pantai
  • 1 tsp red wine vinegar
  • 1 inch ginger
  • 1 fresh red chilli green will do as well
  • 1 inch ginger

Instructions
 

  • Roast peanuts till golden brown and rub between your hands to remove the brown peel. Using a mortar-pestle lightly crush the peanuts.
  • Peel and take all the flesh out of the pomelo. Using your hands break them into bite size pieces.
  • Cut cherry tomatoes into two halves. Peel pomegranate. Cut cucumber in Juliennes.
  • Mix all the dressing ingredients in a bowl.
  • Reserve little peanuts and Gently mix all the other salad ingredients. Pour dressing and mix gently. Garnish with reserved peanuts and microgreens. Serve immediately.

Notes

If you don’t have pad thai use a mix of light soya, sugar, tamarind paste & fish sauce. Skip fish sauce if vegetarian.
