I love all beans or dal in normal terms 🙂 🙂 and moth aka matki is a favorite. And I love greens and topping the list of greens I love is methi, which I can eat in any form. So this moth beans and methi is a perfect combination!
I am always looking trying to make some innovative recipes with methi. This recipe happened last week when I was in such a mood to eat methi in a different way. I had sprouted moth with me and I think sprouts can be the healthiest way to eat any dal since the protein content is the highest and digestion the easiest.
That is why I love sprouts. And honestly, you can do so much with them. Whether it is making the famous misal pav from Maharashtra or a simple sprouts salad with some chutney, sprouts sure are a great ingredient to work with. I love adding sprouts to all sorts of dishes.
And greens of all sorts are super healthy, isn’t it? Try adding some greens to your daily diet. While most people think methi means bitter, honestly, it is not. If you cook them the right way and use the right spices, they are really super yummy. I love the methi paranthas or the methi pakodas which you can make with them. Or the simple methi sambhar which is made in the South of India. Sigh! I love methi, really 🙂
