I heart and I love spinach, And so its made in the household quite often and Ojas seems to like it too which makes it even more common. Hence, I am always on the lookout for some spinach recipes. So when I saw this interesting layered spinach casserole dish with spinach flavored rice and stir fried veggies in Nita Mehta’s Baking Dishes cookbook, I had to make it. It makes a great one pot meal!
This dish gives you the feel of biryani, to be honest! The layering is pretty similar to it and yet this casserole stands out as a stunner. The spices are subtle and not over-bearing. If there is one way you can make everyone eat spinach, this is it! Of course, watching Popeye always works 🙂
