Avocado Cheese Parantha – Easy, healthy tiffin box recipe !

Avocado Cheese Parantha  – creamy avocado meets cheese to make the yummiest child friendly parantha. Perfect for tiffin box or dinner !

I recently got a whole lot of organic Avocados from a farm in Coorg. They are creamy and delicious. While the usual avocado milk shake, smoothie, guacamole is happening. I also ended up making a delicious Avocado Cheese Parantha with them.

No one needs to tell you that avocado’s are extremely healthy. We end up seeing one video a week on social media, telling us the same. At home, we all enjoying eating them, the creaminess is a brilliant way to add good fat to any dish.  They work as excellent replacement of butter or oil in baked goodies and they are my go to substitute for cream if I am making an ice cream or mousse.

But the biggest problem however with avocados is the sourcing. You do get the local rounds ones in various super markets but somehow they go from raw to spoilt overnight. And funnily, I have never had that problem when a friend has given me ones from their trees. Makes you wonder what is the stuff you are really getting off the shelf.

To deal with this from a while now, I have been thinking of planting a tree in my backyard. The husband however is dead against it and says we don’t have space enough to plant a massive tree. So till I arrive at a solution that works for both of us, I am on the constant look out for home grown, natural avocados. And the recent batch came in when a friend said she knows of someone (Pranoy Thipaiah from Kerehaklu plantation) with a few trees in Chickmagalur area. About 5 kgs avocados were ordered for home and we have been playing around with recipes. This avocado cheese parantha is the first in the series.

According to the child, this is the BEST avocado dish he has ever eaten. Let’s discount the fact that he is a piddly 9 year old and go with the fact that he loves it right now. I think these avocado cheese parantha is perfect for tiffin box. They are non messy, cheesy, nutritious and to top it quick to make. Child happy, mother happy !

Ingredients
  

  • 2 large avocado deseed and mashed
  • 2 cups whole wheat flour
  • 1/2 tsp red chilli powder
  • 1/4 tsp Ajwain seeds
  • 1/4 cup coriander leaves
  • Salt to taste
  • 1/2 cup cheese for stuffing
  • Ghee/Oil to fry

Instructions
 

  • To make the dough for paranthas - knead together mashed avocado, whole wheat and spices with warm water. Knead for 3-4 minutes till soft. Set aside for resting.
  • Make 8-10 balls of the dough and roll out the parantha. Add cheese in the middle and fold in choice of shape.
  • Roll again and fry on the hot griddle till both sides are golden brown. Use ghee/oil for frying.
