Vanishing Cupcakes

Thats what I choose to call them wanna know the reason? Yesterday my sil's kids were at my home and predictably came and said auntie please bake something for us... I decided to bake these muffins... I made 18 of them left them for cooling, came back after 30 mins and saw only 10.... packed away one each for their snack boxes in the morning and saw after an hour again and what there were only 4 left... I was like what? In case you are wondering what flavor were these amazing muffins... they were nutella and apple muffins and if I tell you that they were low fat, whole wheat ones will that serve as an icing on top of the cake err cup cake?

    Ingredients

    Whole wheat flour
    1 cup
    All purpose flour
    1/2 cup
    Nutella
    1/2 cup
    Apple pureed
    2
    Cocoa powder
    4 tbsps
    Hot milk
    1/2 cup
    Baking powder
    2 tsps
    Baking soda
    pinch
    Salt
    pinch
    Sugar
    1/2 cup
    Eggs
    3
    Vanilla
    1 tsp
    Dark choco chips
    1/2 cup

    Steps

    1. Beat the eggs and sugar together till slightly fluffy. Add the pureed apples and Nutella. Beat a little more.
    2. Add the cocoa powder to it and mix well.
    3. Sift together the salt, both the flours, baking powder and soda.
    4. Add this along with the choco chips to the wet mixture made above and mix both till just mixed.
    5. Pour the hot milk on top and mix again (don't overmix remember the golden rule of muffins)
    6. Pour in the lined muffin trays and bake in a pre heated oven at 180C for about 20 minutes or till done.

    Note

    more Nutella for the glaze (i.e if u have some left for doing the decorations, I had to satisfy myself with just one)

    oil or butter yes this is a oil free (actually interestingly this was a mistake I forgot to put the butter that Purple foodie mentions, but seriously the muffins were so good that I am happy that I didnt I guess the pureed apples provided the necessary fat to it and I also increased the egg by one)

    I wish I had a picture of the crumb shot to show u guys how nice and soft it was but as I mentioned above it got over before I knew and this one was the only one I could glaze with some Nutella

    And with this we start another round of marathon, a 7-day marathon based on theme cooking and the theme that I have picked this time is the one very close to my heart.... yup you guessed it right its Baked Goods :)
