Breakfast is my comfort meal of the day, I like to experiment with it and continuously eat new, healthy and delicious breakfast. I need my breakfast to be filling and to be balanced and it has to keep me going till about 1 pm because as much as I would like there hardly is time for a snack break during crazy work hours. Mornings are also so hurried that breakfast for weekdays have to be done under 20 minutes at best 30 minutes, there just isn’t more time to put together a detailed meal on table as a result I am on always on a lookout for healthy and delicious quick breakfasts.
Chia seeds & Muesli Parfait is perfect solution that meets all my needs, it is filling and has everything to make it a nutritious well balanced meal and if you soak the super food chia seeds the previous night, it takes exactly 10 minutes to put the breakfast on table from start to finish. What else can one ask from a breakfast.
At our home we have it with regular cow’s milk but if you are vegan or are lactose intolerant this breakfast works very well with coconut milk or almond milk as well.
